The only way to really fight creationism is to use science to demonstrate why it's wrong. A lot of different authors have tried their hand at this over the last thirty years or so. I have a number of books that defend evolutionary theory or dismantle creationism. Here are a few of them:

A powerful, well-written, devastating attack on creationism in all its forms and claims. It's also an interesting treatise on just what _is_ science, and what goes into a true _scientific_ theory. After giving a thumbnail sketch of evolutionary theory and its history in Chapter 1, in Chapter 2 Kitcher considers the question of what science really is -- is it huge collections of data, tables of numbers, etc.? Is it the process of collecting that data? Is it a way of thinking about the world? Is it a method of solving problems? Or what? Next he defends evolutionary theory as science against creationist attacks on it. Finally, he offers a series of devastating arguments that combine to prove that creationism itself is not science in any way.
